I need to do text in a mirror image format so that I can iron it onto a t-shirt, Can this be done, and if so, how?

Type your text and add any effects. Select all the text and then flip it horizontally.

Do the same to any images as well if you need to.

If I remember right when you print on transfer paper it flips automatically, worth checking as its been a while since I did any.

Yes magimag, I agree, if you have a printer that wants you to state the type of paper you are using, and you tell it you are printing onto T-shirt film, then the printer will likely auto-flip it... so take note if you have such a print option, if you flip stuff in Craft Artist, you have to watch out that your printer doesn't auto-flip it back!
